13 - 1 cup prepared salsa
14 - 1/2 cup sour cream
15 - 1 avocado, sliced (optional)
16 - Lime wedges (optional)

# How To Make It:

01 - Preheat oven to 400°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, combine cheddar, Monterey Jack, black beans, bell pepper, green onion, cumin, chili powder, smoked paprika, salt, and pepper. Mix until well combined.
03 - Cut each tortilla in half to create 32 semicircles.
04 - Place 1 tablespoon of cheese mixture on each semicircle. Fold the straight edge over the filling to form a triangle, pressing gently to seal.
05 - Arrange the quesadilla triangles on the baking sheet with points facing inward and slightly overlapping to form a blooming flower shape.
06 - Brush the tops of the quesadillas with melted butter.
07 - Bake for 18-20 minutes, or until tortillas are golden and cheese is fully melted.
08 - Slide onto a serving platter. Sprinkle with fresh cilantro.
09 - Place salsa, sour cream, and avocado slices in small bowls in the center of the ring for dipping. Serve with lime wedges.

# Expert Advice:

01 -
  • It looks like you spent hours when you really spent twenty minutes folding tortillas.
  • Everyone pulls their own piece, so no awkward cutting or serving required.
  • The center becomes a natural bowl for all your favorite dips and toppings.
  • You can prep the whole ring in advance and bake it right before guests arrive.
02 -
  • If the tortillas are too dry or cold, they will crack when you fold them, so let them come to room temperature first or warm them slightly in the microwave.
  • Do not skip the butter brushing step because it is the difference between pale, chewy tortillas and crispy, golden ones that people actually fight over.
  • Arrange the ring tightly with good overlap or it will fall apart when someone pulls the first piece, and then the whole presentation is ruined.
03 -
  • Use two different cheeses because a single variety never melts or tastes as good as a blend, and the mix gives you better texture and flavor.
  • Press the edges of each triangle firmly but gently after folding so the filling does not leak out during baking and create a cheesy mess on your pan.
  • Let the ring cool for just two or three minutes before serving so the cheese sets slightly and people can pull pieces without everything falling apart in their hands.
