01 - 1 large cauliflower head, cut into florets
02 - 1 large cucumber, sliced into 0.4-inch rounds
03 - 2 medium carrots, peeled; one cut into sticks, one peeled into thin ribbons
04 - 1 small red bell pepper, sliced into small strips
05 - 1 small yellow bell pepper, sliced into small strips
06 - 6 cherry tomatoes
07 - 1 black olive, sliced into thin rounds
→ Dip
08 - 7 oz Greek yogurt or sour cream
09 - 2 tbsp mayonnaise
10 - 1 tbsp lemon juice
11 - 2 tbsp fresh chives or dill, finely chopped
12 - 1 garlic clove, minced
13 - Salt and pepper, to taste
# How To Make It:
01 - Slice the cucumber into 0.4-inch rounds. Cut one carrot into sticks for arms and peel thin ribbons from the other carrot for the scarf. Slice bell peppers into small strips for the hat, buttons, and scarf accents. Slice the black olive into thin rounds to use as eyes and mouth.
02 - On a large platter, arrange three cauliflower florets vertically in increasing size to form the body. Use cucumber rounds to represent snow at the base. Position carrot sticks as arms and carrot ribbons around the neck as a scarf. Apply black olive slices to create eyes and mouth, a small carrot piece for the nose, and bell pepper strips for the hat and buttons. Surround with cherry tomatoes and remaining vegetables as additional crudités.
03 - In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, chopped chives or dill, and minced garlic. Season with salt and pepper to taste.
04 - Place the prepared dip in a small bowl adjacent to or within the platter for dipping alongside the arranged vegetables.
